Oatmeal Applesauce Raisin Cookies With Cardamom Glaze

  • 2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 to 1/2 tsp nutmeg (depending on your taste)
  • 1 stick of unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup applesauce (unsweetened)
  • 2 cups old-fashioned oats
  • 1 cup golden raisins

For Glaze:

  • 3/4 cup powdered sugar
  • 1/2 tsp cardamom (or more to taste)
  • 2-4 tsp water

Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl with a whisk and set aside.

Combine butter, granulated sugar, and brown sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, 2 minutes or so. Then, add the egg, vanilla, and applesauce. Beat to combine.

Add the flour and mix just until combined. Add the oats and mix until combined. Then, stir or mix in the raisins. Chill the dough for at least 30 minutes.

While the dough is chilling, heat the oven to 350 F.

Form 1-inch balls with the cookie dough and place on a non-stick baking sheet (or a baking sheet lined with parchment) 2 inches apart. Bake for 13-15 minutes until they are golden brown and set around the edges. Let them sit on the baking sheet for 2 minutes before moving them to a wire rack to cool.

After they are completely cool, make the glaze. Mix powdered sugar, cardamom, and enough water to create a drizzle-like consistency (i.e. when you use a spoon, you should be able to easily drizzle the glaze over the cookies...not too thin, not too thick). Place the racks of cookies over wax paper or parchment. Drizzle the glaze over them. Enjoy!

This recipe makes roughly 2 1/2 dozen cookies.
