Hibiscus Tea & Candied Gingered Ice

Prepare  the iced cubes a day in advance. Candied ginger can be found in most major health-oriented grocery stores.


  • Candied ginger, (about 1/4 cup) chopped
  • One family size hibiscus mint tea bag
  • Place about a 1/2 teaspoon of candied ginger into the vessels of two ice cube trays, fill trays with water. Freeze overnight. Place tea bag in a large pitcher to accommodate 2-quarts of water. Fill with hot or cold water, (cold water works beautifully and steeps great in the refrigerator) steep for 15-20 minutes, the longer the better.
  • Fill glasses with prepared ice cubes. Garnish each glass with a fresh mint sprig and garnish the rims with a candied ginger round. Yields eight, 1 cup glasses of tea.
